Raw Apple, Date & Walnut Cake Recipe

After seeing this amazing recipe in Vegan Life Magazine by The Rawtarian I had to try it out.

Raw apple walnut cake

I have amended it slightly as I didn’t have all the correct ingredients and of course I have sought permission to post my version. The main thing I changed was swapping out the raisins for dates as I this is what I had handy, and I love dates!



  • 4 small roughly chopped apples not peeled
  • 200 grams walnuts
  • 3/4 cup pitted dates
  • 45 grams shredded coconut (I used coconut flakes)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon


  • 110 gram cashews (I soaked mine for an hour first)
  • 2 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Water (use about one tsp from water used to soaked the cashews)

To make the cake

Chop the apple & put in food processor, process briefly into small bits. Add other ingredients but do not over process, you still want to be able to see the pieces. Press the mixture into a cake tin or a glass dish.

To make the icing

Placing ingredients in blender and process till smooth adding water to make the mixture easy enough to spread but not runny. Spread over top of cake mixture and add a couple of bits of walnuts. Place in fridge until cake is hard.
