Vegan Chocolate Mousse Pie

If you’re looking for a delicious cruelty free dessert then this chocolate avocado mousse pie is the one for you.

Crust

  • 1 cup almonds (can change the nuts up for whatever you have available)
  • 1 cup hazelnuts
  • 12 dates pitted (if dried dates then soak in water first to soften)

Mousse Filling

  • 2 avocados
  • 1/2 cup cashew (can leave these out but if you do may need to use less water as cashews act as thickener)
  • 1/4 cup cocoa
  • 1/3 – 1/2 cup maple (depending how sweet you want)
  • 1/2 tbsp coconut oil
  • 1 tsp vanilla
  • pinch of Himalayan salt
  • 1/2 cup water (add half cup and add more as you go if needed)

For the crust blend nuts in blender until they are ground small. Scoop out half the nuts and loosen the remaining ones, then add dates and other half of nuts back in. Blend again until combined. Scoop out mixture and press firm into the bottom of a 7.5 inch cake tin (or equivalent).

For the mousse filling simply add everything into blender and blend. Add more water as you go until you get desired consistency. The trick is to start blending slow and have patience, increase speed as you go and if necessary stop and scoop down sides then blend again until creamy. Once done scoop out and pour on top of crust. Place in fridge to firm up.
